Sylvain Cathiard
About Sylvain Cathiard
Originating from Savoie and arriving in Burgundy to work with the imperious Domaine de la Romanée Conti and Domaine Lamarche, the Cathiard family possess one of the most impressive collective CVs in the world. It has, expectedly, forged its glorious reputation later when they started a winery themselves.
Currently at the helm is Sebastian Cathiard, the third generation of the family, who cultivates a mere 5.5 hectares of land spread over so many sites with none bigger than one hectare. For context, the largest cuvée Cathiard produces is the Bourgogne Rouge, which sees just over 2,000 bottles of production each year.
Because of the scarcity, the unmatched demand and the heavy allocation for top restaurants, his wines are, naturally, some of the hardest to acquire.

The 2023 Bourgogne Aligoté was bottled in April. It has a clean and sharp bouquet—a little more malic, perhaps from the fruit located up in the Hautes-Côtes. The palate is well balanced, a little oily in texture, with fine acidity and a lighter, sour lemon- and ginger-tinged finish. Enjoy this over the next four or five years.$279 - $335

The 2022 Bourgogne Hautes Côtes de Nuits Aux Chaumes has an open and quite earthy bouquet with ample brambly red berry fruit tinged with brown spices. The palate is medium-bodied with a ferrous entry, grainy tannins and quite peppery with a slightly savoury finish. Ready to drink now but it will continue to give drinking pleasure for three or four years.$354.00 -

The 2023 Bourgogne Hautes-Côtes de Nuits Aux Chaumes has a subtle, floral bouquet with impressive precision and poise. Its very pure red fruit seems to shimmer with energy. The palate is medium-bodied with gentle grip and slightly darker fruit than the regular Hautes-Côtes. More salinity comes through on the finish. Excellent.$311.00 -

The 2023 Bourgogne Hautes-Côtes de Nuits Les Dames Huguette, from a vineyard that touches the Aux Chaumes but has more limestone soils, shows a little more ripeness on the nose: more forward, vivacious red berry fruit mixes with hoisin. The palate is well balanced with dark berry fruit and a touch of cola. This has fine weight and focus, though perhaps it will require a couple of years to fully integrate.$311.00 -

Jasper Morris Inside Burgundy (87-88)
A lighter crimson ruby. The nose takes a moment to come out. A leafy note to the fresh red fruit, medium bodied, a little leaner than the Bourgogne but fine-boned and will develop further when the oak subsides. 60% vignes basses, the other two cuvees 100%. Drink from 2026-2028. Tasted Nov 2024.$106.00 -

The 2014 Bourgogne Rouge, which comes from a single parcel between Vosne-Romanée and Clos Vougeot, has a crisp bouquet with blackberry and briary scents. The palate is well balanced with dusky dark plum and blackberry fruit, quite citric towards the finish that just needs to brighten up a little.$226.00 -

The 2020 Bourgogne Rouge comes from two parcels, one close to where Les Croix Blanches is located. This has quite a high-toned, very floral bouquet that errs close to Syrah in personality. The palate is ripe on the entry with soft black plummy fruit, a touch of dessicated orange peel on the finish that is just a little short.$297.00 -

The 2021 Bourgogne Rouge offers ripe scents of red cherry and crushed strawberry. Touches of rose petal emerge with time. The palate is nicely balanced with fresh acidity, hints of dried orange peel complementing the dark berry fruit on the finish. Fine.$179.00 -
